An anecdote about Xian subway construction

Xi’an city has the largest number of ancient tombs in China, the most famous one is the Qin Terracotta Warriors. There are so many ancient tombs in Xi’an that people are joking that if the local people in Xi’an don’t have one or two tombs underneath their house, they will shame to say hi to their friends.

Because of thousands of tombs underneath the ground, the subway construction was delayed again and again. The transportation designers find a best line to avoid all the tombs before construction. Even though they tried their best to avoid it, the construction team still found some relics during construction, so the builders had to stop and wait until the archaeologists clear all the relics.

Some Special Chinese food in Xian

1.Flatbread in mutton soup (Yangrou paomo)

Yangrou paomo is the most iconic dish in the Xi’an traditional food. The ritual before eating a paomo – tearing the bread into small pieces yourself before letting the chef turn it into a stew – is as enjoyable as the dish itself.

2.Xian meat burger (roujiamo)

Roujiamo is the city’s favorite burger. A delicious roujiamo is composed of two key elements – juicy shredded braised pork and a crispy baked bread. Almost all SII interns fall in love with Roujiamo after they eat it.

3.Cold noodles(Liangpi)

Cold noodles (liangpi)-Rice noodles are cooked, coolechili oil, pepper powder, vinegar anddiced garlic. Then it’s garnished with bean sprouts and sliced cucumber.

4.Biangbiang noodlesd and thinly sliced.

The noodles are often served in a sauce made of Biangbiang noodles – commonly described as resembling a belt, biangbiang noodles are wide, thick and long. One string of noodles can easily fill you up.
